Just over two years ago, I came up with one of my most popular recipes– Creamy Margarita Popsicles. At the time, James told me that they were going to be a hit; “You should sell these,” he said, “You’d make a lot of money.” And even though I didn’t decide to venture into entrepreneurship with a boozy popsicle stand, I still think he was right.

After a year of James begging me to make more poptails, I finally caved and decided to make Boozy Red, White, and Blueberry Cheesecake Popsicles. James told me that they were the best dessert I’d ever made. Those also wound up being a hit with everyone who tried them.

Strawberry-Kiwi Frozen Mojitos

When I bought them, I had every intention of using my fresh strawberries and kiwis into a fruity summer salsa.  I imagined scooping it on top of crisp tortilla chips or flaky fish tacos, and was enthralled at the idea.

But then I thought, What if I added rum to the salsa? That would be delicious. 

And then, What if I added mint to the rum-soaked salsa?!  Yes.  YES.

Strawberry-Kiwi Frozen Mojito.  Fresh fruit, mint, rum, simple syrup, and ice makes this the PERFECT summer drink.  It tastes even better than it looks!

And eventually I abandoned the whole fruit salsa idea in favor of Strawberry-Kiwi Frozen Mojitos.  While I’m positive that the salsa would have been out-of-this-world, I have no regrets.

You won’t have any regrets either as long as you make these Mojitos tonight.

I thought about calling these “The Absolute Best Frozen Dessert The World Has Ever Seen”, but that seemed a little too wordy.  Boozy Red, White, and Blueberry Cheesecake Popsicles was shorter– by a margin– so I went with that.

You can call them whatever you want though, because it all sounds like gibberish when you’ve got a mouthful of poptail.
