Dark 'N Stormy Cocktail

It's a beautiful day out in New Jersey, which is shocking to see and write after what has seemed like a century of dreariness.  The skies are blue, the sun is shining, and it seems only right to celebrate the amazing weather with a cocktail.  The perfect drink for such an occasion?  The Dark 'N Stormy.  How ironic.

Dark and Stormy

Despite its name, the Dark 'N Stormy actually makes a great warm-weather drink.  The spiciness of  ginger, richness of black rum, and the acidity of the lime evoke a tropical feeling without using a hundred fruity syrups or begging for an umbrella garnish.   It's a simple 3-ingredient cocktail, and each of the 3 is extremely important to the flavor of the drink.  Don't skimp on the rum or lime, because you might find that the ginger beer actually burns the back of your throat a bit from the intensity of the spice if it's not tamed down.  When the ingredients are well-balanced, though, they're fantastic.
