Cheesesteak Stuffed Mushrooms

Football season is coming up, and in my area that means a few things:

  • Passionate, reckless fans and a lot of trash talking
  • Beer, beer, and more beer
  • Still more beer
  • There is no question of what we’re doing on Sundays
  • Cheesesteak

Cheesesteak Stuffed Mushrooms- A gluten free, easy to make, and super tasty appetizer for game day or parties! |
Now, Cheesesteaks are always popular here in the oh-so mystical land we call the greater Philadelphia area.  Whether they’re with wiz or provolone, loaded up with onions or not, you can find them at almost every establishment with their soft bread soaking up the juices from the strips of beef.

Just typing that is making me drool.

Maple Waffle Chicken Nuggets

People let me tell you ’bout my beeeest friend!

Maple Waffle Chicken Nuggets. These chicken nuggets are coated in maple-y waffle batter and served with a honey maple mustard dip. Perfect for parties or game day! |

I’m going through Amanda-withdrawal this week because my partner-in-crime is on vacation in Lake George.

Well, “crime” might be a bit of an exaggeration.  Our hang-out time usually consists of going grocery shopping together and complaining about all of the people who stop their carts in the middle of the aisle (if you do that, for the love of all things good in this world, please stop), or sitting on the couch with our laptops and not speaking for hours while we both do work.

It’s a wild and crazy life we lead, try to keep up.

Garlicky Feta Dip

If I could make Greek-inspired dishes every single day for the blog, I probably would.  You might be getting sick of the mass amounts of feta I’ve been shoving into recipes (hello, Zucchini, Feta, and Spinach Fritters, Greek Chicken “Pitzas”, and Athenian Chicken Quesadillas), but I can’t help myself.  I’ve got a fever and the only prescription is more feta.

Garlicky Feta Dip. This creamy, tangy dip goes great with pita and is easy to whip together as a party appetizer! |

But if you are right there with me riding this feta train until it breaks down, then behold this delightful bit of taste-bud splendor: Garlicky Feta Dip.

Cilantro-Garlic-Lime Seafood Packets

Happy Fourth of July!   Well, okay, I’m one day early, but I really wanted to make sure that I got the chance to say it, and that I got to share these “The Bomb” Seafood Packets with you before your Independence Day celebrations!

Cilantro-Lime-Garlic Seafood Packets! These easy-to-make packets are filled with shrimp, clams, scallops, chorizo sausage, corn, and tomatoes! The seafood and sausage steams in its own juices and mixes with cilantro, lime, garlic, and a bit of butter to create an amazing sauce that you can dip bread in or serve over rice. The individual packets can be made on the grill or in the oven and are great for parties! My dad kept calling them THE BOMB Seafood Packets, haha! |

The Cilantro-Garlic-Lime Seafood Packets are loaded up with shrimp, clams, scallops, chorizo sausage, corn, and cherry tomatoes, which steam in their own juices in these individual-sized serving packets.  Fresh cilantro, lime juice and zest, garlic, and a bit of butter (and maybe even a few slices of jalapeno, if you like some extra heat) add extra flavor to the juices, which make a great dip for crusty bread or sauce for rice or pasta!

I affectionately call them “The Bomb” Seafood Packets, because they disappeared at my house in seconds, but I made sure to save a packet for my dad, who is a huge clam-lover.  I gave him the leftover packet the next day, and 2 hours later, got the following text:

“Those packets were the bomb.”

And then,

“Seriously, the bomb!”

So I’m pretty sure he liked them just as much as I did.

Boozy Red, White, and Blueberry Cheesecake Popsicles

I’m really bad at coming up with short recipe names.

Boozy Red, White, and Blueberry Cheesecake Popsicles. Perfect for Memorial Day Weekend, Fourth of July, Labor Day Weekend, or just any summer party! So delicious you should make several batches ;) |

I thought about calling these “The Absolute Best Frozen Dessert The World Has Ever Seen”, but that seemed a little too wordy.  Boozy Red, White, and Blueberry Cheesecake Popsicles was shorter– by a margin– so I went with that.

You can call them whatever you want though, because it all sounds like gibberish when you’ve got a mouthful of poptail.

I love that word.  “Poptail.”  What is it, you ask?  Well, you see, when a popsicle loves a cocktail very much…
