Loaded Mashed Cauliflower

Ingredients

  • 1 large head cauliflower (about 4.5-5 cups), cut into florets
  • 5 slices bacon
  • 4 cloves garlic, minced
  • 1/4 cup milk
  • 1 tablespoon butter
  • 2 tablespoons reduced fat sour cream
  • Kosher salt and black pepper, to taste
  • 1 small bunch of chives, chopped
  • 1/2 cup reduced fat cheddar cheese, shredded

Instructions

  1. In a large pot of salted water, boil the cauliflower until softened, about 15-20 minutes. Drain and set aside
  2. Cook the bacon until crisp in a large, high walled pan over medium heat. Remove the bacon from the pan, chop, and set aside.
  3. Pour off excess grease, leaving about a tablespoon in the pan. Return to medium heat. Add in the garlic and saute until fragrant, about 1 minute. Add in the boiled cauliflower. Mash the cauliflower with a potato masher or fork.
  4. Mix in the milk, butter, and sour cream, continuing to mash the cauliflower until no big chunks remain. Season with salt and pepper. Mix in half of the cheddar cheese, chives, and bacon. Divide into bowls or plate and top with remaining cheese, chives, and bacon. Serve warm.
