But he is a big fan of these sandwiches, because…. well, who wouldn’t be?  Homemade pesto, grilled eggplant, fresh mozzarella, roasted red peppers, thinly sliced prosciutto, and creamy goat cheese all on savory ciabatta?  I’ll take twelve, please.

The first time I ever made pressed picnic sandwiches, I was going to meet James’ family for the first time for a Labor Day BBQ.  His mom was preparing a ton of hot food for the main course (although at this point I was only partially informed of just HOW MUCH of a serious hostess she is– the woman goes all out, leaving no detail overlooked) so I thought I’d bring something that people could snack on that would be good at room temperature until the big dishes were ready.  Picnic sandwiches sounded like the way to go.

And they were.  They flew off the platter and earned me some praise from the entertaining mastermind herself.  Ever since then, I have been making them for every big summer BBQ, picnic, or event that I can.  I can’t get enough of them.

This combination is my favorite, but you can switch it up and use a lot of different kinds of cheeses, veggies, and meats if you’d like.  Just put ’em all together, press them down, wrap them up, weight them (preferably with a large Italian cookbook and 2 small dumbbells, as shown above, in a very cluttered fridge), and then cut into small portions when you’re ready to serve.

Ingredients

For the Pesto:

  • 2 cups fresh basil leaves
  • 1/3 cup Parmesan cheese
  • 1/3 cup pine nuts (Allergic to pine nuts? Try walnuts, almonds, or sunflower seeds!)
  • 3 cloves garlic
  • 1/2 teaspoon kosher salt
  • 1/4 cup olive oil

For the fillings:

  • 1 red bell pepper
  • 1 eggplant, cut lengthwise into 1/4 inch thick slices
  • Olive oil, for brushing
  • Kosher salt and freshly ground pepper, to taste
  • 4 oz soft goat cheese
  • 1/2 lb fresh mozzarella cheese, cut into thick slices
  • 1/3 lb sliced prosciutto
  • 1 loaf ciabatta, sliced in half

Instructions

  1. First, make the pesto. In a food processor, combine the basil, Parmesan, pine nuts, garlic, and kosher salt. Pulse until well-mixed. Slowly pour the olive oil into the food processor as it is running, and continue to run until the pesto comes together. Set aside.
  2. Preheat the grill to high. Grill the bell pepper, turning frequently, until blackened on all sides. Remove from the grill, place in a bowl, and cover tightly with plastic wrap for 15 minutes. After 15 minutes, peel the skin from the pepper, rinse, pull out the stem and seeds, and cut into strips.
  3. As you wait for the pepper to be ready, brush the sliced eggplant with oil, sprinkle with salt and pepper, and grill over medium-high until cooked through, about 4 minutes per side.
  4. Spread the pesto on one of the pieces of bread, and goat cheese on the other. Layer on the prosciutto, roasted red peppers, mozzarella, and eggplant, and then sandwich the two pieces together.
  5. Press down on the sandwich, and then wrap tightly with plastic wrap. Weigh down with a heavy object and let sit in the fridge for at least 2 hours, or overnight.
  6. When ready to serve or pack, unwrap the sandwich and cut off the very ends and sides to make them even. Then, cut the sandwich into mini sandwiches (I usually wind up with about 10 per loaf).
  7. Wrap the sandwiches to keep them together while traveling, if necessary, and serve at room temperature.

    These look delicious! I’m going to make them this weekend – I’ll leave off the prosciutto since I’m a vegetarian – maybe add some chopped olives instead. Love how you’ve wrapped them – great pictures.

      I have used the broiler in my oven to prepare the red pepper. I just kept an eye on it and kept turning the pepper when it was blackened.

    Yum! Made this for dinner last night. Didn’t do the press and set for 2 hours – and it was still delicious! My husband put grilled peaches in his and loved it. We have extra ingredients and are making it again tonight. Love it!
